MOUTAI, China’s “NATIONAL LIQUOR” is the world’s most valuable liquor brand and is known as one of the top three famous distilled spirits in the world for over 100 years, alongside French cognacs and Scotch whiskies. MOUTAI stands as is the absolute top choice for Chinese baijiu. MOUTAI is named after its origin, and is produced exclusively in the town of Moutai, Guizhou (Kweichew) Province, China, just along the banks of the Chishui River. Moutai is the originator and typical representation of the Sauce Aroma baijiu.
THE HISTORY OF MOUTAI
MOUTAI has a long history. As early as 135 B.C., The “Qi Jiang Jiu” produced in the area of Moutai Town was considered a tribute to the royal family. After more than 2,000 years of development, MOUTAI has become an outstanding representation of baijiu, which won the gold medal at the Panama World Expo in 1915. Today, the combination of ancient traditional techniques and modern technology has produced “MOUTAI”, the number one brand of distilled spirits in the world.
MYSTERIOUS ENVIRONMENT
MOUTAI, situated in a river valley of which 15.03 square kilometers is the only production area for Moutai. It is surrounded by mountains and is warm in winter and cool in summer. These conditions assist the habitat and breeding of microorganisms needed for brewing and creating unique microbiological environments, resulting in the impressive style of Moutai.
THE MAKING OF MOUTAI
The making process of MOUTAI follows the changes of four seasons, and specific key production steps must be carried out according to a certain day of the lunar calendar, absorbing the essence of nature, making it a “living fossil” of the Chinese baijiu process. It takes at least five years for an ordinary bottle of Moutai to leave the distillery, during which time it undergoes thirty processes and 165 steps.
MOUTAI’S INGREDIENTS
MOUTAI is made from a mix of locally produced red sorghum (a small grain rich in tannins), wheat and water from the pristine Chishui river. It is 100% organic without the addition of any artificial additives.
The input and output ratio of the material for making MOUTAI is 5:1, which means 2.5 kilograms of raw grain will give 0.5 kilogram of the liquor.
MOUTAI’S TASTING NOTES
Intense grain aromas, typical millet, wheat, somewhat rice, a touch of soy sauce, ripe bananas, malt beer, yeast, strawberry, exotic notes, mango, coconut, chocolate, caramel, grassy-green spiciness, floral aspects, fresh-acidulous and drop-like roasty aromas. Polarising style, strong millet character, strawberries, bock beer, dark chocolate, cocoa, caramel, walnuts, somewhat yeasty and marclike, minty and menthol-like, complex, balanced, very good length.
